
You will need:
Little GF Chefs Chocolate Cake Mix
4 tablespoons dairy free butter
3 tablespoons applesauce
2 tablespoons dairy free milk
1 teaspoon vanilla
Directions:
1. Place 4 tablespoons dairy free butter in a small bowl in freezer for 15 minutes.
2. Pour chocolate cake mix into large mixing bowl.
3. Add chilled dairy free butter, 3 tablespoons applesauce, 2 tablespoons dairy free milk, and 1 teaspoon vanilla to mixing bowl.
4. Mix until totally smooth. Notes: mix should start to come together off of the sides of the bowl to form a ball. If mix is too dry, add one teaspoon milk at a time and mix.
5. Place two parchment paper lined baking sheets on counter.
6. For large cookies: Fill an ice cream scoop with cookie dough (about 2 tablespoons) and place it on top of parchment paper. Repeat with all cookie dough, placing them 1 1/2 inches apart.
For mini cookies, measure 1 tablespoon per cookie instead.
7. Place another piece of parchment paper on top of cookie dough. Using bottom of a tall drinking glass, lightly press down on cookies to help flatten them. Cookies should be about 1/4 inch thick.
8. Bake at 350 for 8 minutes.
9. Let cookies cool.
WANT TO MAKE ICE CREAM SANDWICHES?
1. Remove 1 pint of ice cream from freezer and let it sit on the counter for 5 minutes.
2. Squeeze pint of ice cream out of container onto a cutting board, and turn it on its side.
3. With adult supervision, slice the block of ice cream with a kid- safe knife 1/2-1 inch thick Note: width depends on how much ice cream you’d like inside your ice cream sandwiches. If you want them larger, you will need two pints of ice cream, but only remove one from the freezer at a time so it doesn’t melt too much. Alternatively, you can use ice cream scooper to place 3-4 scoops of ice cream between two cookies.
4. Place ice cream slice in between two cookies and press down gently to help it stick together.
5. Wrap ice cream sandwich in plastic wrap, and freeze for 2 hours.
6. Repeat steps 4-5 for all ice cream sandwiches.
7. Remove and unwrap ice cream sandwich from freezer, and roll them in any toppings you’d like!
8. Enjoy right away, or wrap back in plastic wrap and freeze for later.
